A great way to make a meal under budget is to aim for as few side dishes as possible. Put your money in the main dish!

Chicken-Spinach Meatball Pasta Bake-There are vegetables in the meatballs and the sauce! Serves up to 6 people.
Thai Noodle Salad with Turkey and Shrimp is a great way to use up some leftovers (free food!) in a new way.
Butternut Squash and Swiss Chard Lasagna is an elegant and affordable way to feed roughly 10 people for under $10.
Perfect for summer, all Chilled Borscht needs is some crusty bread to make it a complete meal.
Heirloom Tomato Spaghetti Strata is easy to make but special enough to serve at a special brunch.
Stuffed Cabbage-a complete meal in itself, you can serve 6-8 people easily for under $10.
Thai Tofu on Lemongrass Skewers is perfect for the grill and only needs some rice on the side to make it a complete meal.
Eggplant Rollatini with Rapini is a thrifty choice that makes enough for 2 large meals for under $10 total.
